Try this Allergy Friendly Tigger-ific Pumpkin Fudge

Disney Family posted this great pumpkin fudge receipe that is even allergy friendly. Not only that, but it is inspired by our favorite bouncy friend from the Hundred Acre Woods’. A different way to bring a pumpkin dessert.

Ingredients

1/2 cup pumpkin puree

1/4 cup pure maple syrup

1/2 teaspoon ground ginger

1/3 cup gluten-free, dairy-free chocolate chips

Mini paper baking/party cups

1/2 cup coconut butter, softened

1/2 teaspoon cinnamon

Pinch of salt

Mini muffin pan

Wooden toothpick

Directions

Step One: Line each cup of the muffin pan with a mini paper baking cup.

Step Two:  Combine the pumpkin puree, softened coconut butter, maple syrup, cinnamon, ginger, and salt in a mixing bowl, and whisk until well blended.

Step Three:  Heat chocolate chips in a microwave-safe bowl for 15 second intervals, stirring in between, until chocolate is melted and smooth. Fill the bottom of each paper baking cup with a teaspoon of melted chocolate. Tip: Use the tip of a wooden toothpick to spread the chocolate evenly across the bottom.

Step Four: Top the chocolate in each cup with a spoonful of the pumpkin mixture, using the back of the spoon to smooth the surface.

Step Five: Use the toothpick to drizzle or “paint” several thin chocolate stripes across the top of each fudge cup, reheating the chocolate if it starts to thicken before finished.

Step Six:  Chill the fudge cups in the muffin pan for 30 minutes to let the chocolate harden before removing them from the pan. Enjoy!
