Tonga Toast Recipe from Disney’s Polynesian Village Resort
Serves 4 

Ingredients:

For the Cinnamon-Sugar Coating: 

  • 3/4 cup granulated sugar
  • 2 teaspoons ground cinnamon 

For the Batter: 

  • 4 large eggs 
  • 1 1/3 cup whole milk 
  • 1/4 teaspoon cinnamon 
  • 1 tablespoon granulated sugar 

Tonga Toast 

  • 1 quart canola oil for frying (or enough to deep-fry) 
  • 1 loaf of sourdough bread (12 inches long, uncut)
  • 2 large bananas, peeled and halved 

Directions: 

Prepare the Cinnamon-Sugar Coating:

In a medium bowl, mix the sugar and cinnamon with a fork in a medium bowl until fully combined. Ensure the bowl is large enough to roll the toast slices later. Set this magical mixture aside—this is what gives the Tonga Toast its signature crunchy sweetness!

Make the Batter: 

In another medium-sized bowl, crack the eggs and whisk them until thoroughly beaten. Add in the milk, cinnamon, and sugar, then mix until everything is well combined. This batter will coat the bread and give it a deliciously rich flavor. Set aside.  

Cut and Stuff the Bread:

Start by slicing your sourdough loaf into four thick slices—each about 3 inches wide. You’ll need sturdy slices to hold all that banana goodness!

Next, take each banana half and slice it lengthwise. You should now have four pieces of banana per whole banana.

Now, take each slice of bread and gently tear out a small pocket in the middle (but don’t tear it all the way through). This is where the magic happens—stuff one banana piece into each slice of bread. The bread acts as a little pocket to hold that creamy banana inside!

Heat the Oil:

It’s time to bring the heat! Preheat your oil to 350°F in a large pot or deep fryer. If you’re using a pot, be sure to use a candy thermometer to monitor the temperature. Be cautious—hot oil can be dangerous, so keep kids and distractions away during this step.

Dip and Fry:

Now, for the fun part! Take each banana-stuffed bread slice and dip it into the egg batter, making sure to coat both sides. Allow any excess batter to drip off before carefully placing it into the hot oil.

Fry each slice for about 4-5 minutes until it’s golden brown and crispy. If needed, flip the toast halfway through to ensure both sides are perfectly fried. Once done, remove the toast from the oil and let it drain on a paper towel to soak up any excess oil.

Roll in cinnamon sugar:

While the Tonga Toast is still warm, roll each slice in the cinnamon-sugar mixture you prepared earlier. This coating is what turns the toast from tasty to unforgettable! Make sure each piece is thoroughly covered so you get that crunchy, sugary texture with every bite.

For Tonga Toast: 

  1. Using caution, preheat oil to 350°F in a large pot or a deep fryer. (If using a large pot, use a candy thermometer to make certain the oil does not get any hotter or it will burn.) 
  2. Slice the bread into four three-inch-thick slices. 
  3. Cut each banana in half crosswise, then each piece lengthwise. 
  4. Place a bread slice flat on the counter and tear out just enough from the middle (do not tear all the way through) to stuff half a banana into; repeat with each bread slice. 
  5. Dip stuffed bread into batter, covering both sides, allowing excess batter to drip off bread and place carefully into hot oil. 
  6. Cook 4-5 minutes until golden brown. If needed, turn toast over after 2 minutes and cook for another 2 minutes on other side. Remove and drain excess oil. 
  7. Roll toast in cinnamon-sugar. Repeat for each piece of toast.
