Gideon’s Bakehouse may be preparing for a major change at Disney Springs. After years of heavy crowds and frequent virtual queues, new filings and visible storefront updates suggest the popular bakery could be expanding within the shopping and dining district.
Since opening at Disney Springs in January 2021, Gideon’s Bakehouse has become one of the area’s most consistently busy food locations. The bakery is known for its “almost half-pound” cookies made from scratch, which quickly attracted attention from both Walt Disney World guests and local visitors.

Demand increased rapidly. Long lines became common, particularly in the evenings and on weekends. To manage crowds, Gideon’s regularly uses a virtual queue system during peak hours.
Guests who receive a return time are still required to wait in a physical line. Gideon’s has said the in-store wait “usually only lasts around 15 minutes,” though conditions vary depending on attendance levels and seasonality.
The popularity has prompted mixed reactions. Some guests praise the bakery’s offerings, while others have criticized the crowd levels. Online, the experience has been described using terms such as “outrageous” and “batshit insane.”

Those crowd conditions have now raised questions about whether Gideon’s Bakehouse is preparing to expand.
Permit Filing Points to New Gideon’s Location
Earlier this month, a Notice of Commencement filed with Orange County drew attention from Disney observers. The permit referenced a “New Tenant Build-Out” at 1600 E. Buena Vista Dr., Suite C-22, the former Art of Shaving location at Disney Springs.
Walt Disney World was listed as the property owner. The client named on the filing was The First Raven LLC, the business entity associated with Gideon’s founder, Steve Lewis.

The filing immediately led to speculation that Gideon’s Bakehouse could be opening a second location within Disney Springs. While no official announcement has been made, recent changes to the storefront have added to the discussion.
Visitors have reported new artwork installed behind the windows of the vacant space. The designs appear consistent with Gideon’s visual style and have been partially obscured by window glare.

The artwork reportedly features birds, a crown, and a sword. The imagery differs from Gideon’s standard logo, suggesting the space may not be a direct replica of the existing bakery.
A sign posted on the door reads, “Please Pardon Our Appearance. Something New is Coming Soon.”
What an Expansion Could Mean for Disney Springs
If confirmed, a second Gideon’s Bakehouse location could help relieve congestion at the original storefront. Some fans have suggested the new space could operate as a coffee-focused concept with a different selection of baked goods.
Disney Springs has increasingly supported expansions from established, high-performing tenants. Adding a second Gideon’s location would align with that approach.
Neither Disney nor Gideon’s Bakehouse has publicly commented on the permit or storefront changes. Until then, the situation remains unconfirmed.
