There are so many amazing eats and sweets to enjoy when visiting the Walt Disney World Resort. Between the Magic Kingdom, EPCOT, Animal Kingdom, and Disney’s Hollywood Studios, there are simply too many amazing options and not enough time to try them all. Deciding where to dine and what you want to eat can be one of the most difficult parts of planning your magical vacation.

While the Magic Kingdom may not be the food mecca of the Resort, there are still a lot of great options. Over in Adventureland, the Jungle Skipper Canteen offers great dishes like “Tastes Like Chicken” Because It Is! and Nile Nellie’s Noodle Bowl. There are also great snack options like the Cheeseburger Spring Rolls.

To prep, you’ll need six ramekins and, for this upside-down cake, we are actually going to start with the topping.

  • 1 (20 ounce) can of pineapple slices in 100% pineapple juice (DOLE recommended), 6 tablespoons of pineapple juice from can (reserve for use in cake)
  • 4 tablespoons butter, melted
  • 1/2 cup firmly packed light brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 6 maraschino cherries

Start by greasing each ramekin. Then, combine the melted butter, brown sugar, cinnamon, and ground ginger. Spread 1 1/2 tablespoons of the mixture onto the bottom of the ramekins. Then, place a pineapple ring on top of the mixture and put a maraschino cherry in the middle of the ring.

Next up, we have the recipe for the DOLE Whip. This frozen treat has just a few ingredients.

  • 1/2 to 3/4 cup pineapple juice, divided (DOLE recommended)
  • 2 cups frozen pineapple chunks (DOLE recommended)
  • 1 cup dairy-free vanilla ice cream

Add the pineapple chunks, dairy-free vanilla, and half the pineapple juice to a blender and blend until smooth. If the mixture is too thick, thin it out by adding 2 tablespoons of pineapple juice at a time until it reaches the proper consistency.

Whisk together the flour, salt, and baking powder, and set aside. Cream together the softened butter and sugar until it becomes pale yellow and is light and fluffy. Then, you’ll want to add the egg and vanilla extract. Add in half of the pineapple juice and half of the flour mixture and combine. Once combined, add the remaining pineapple juice and flour.

Add 1/3 cup of batter to each of the ramekins that you have set aside that contain the topping. Place the cakes in a preheated 375° oven and bake for 20–22 minutes. Remove the cakes from the oven and let them sit for about 3 minutes before using a knife around the edges to remove them from the ramekins.
